MANAGER OF FOOD & BEVERAGE

The Manager of Food & Beverage is responsible for managing and overseeing all food and beverage operations for the Orpheum Theatre Group, while also increasing earned income from existing activities and creating new opportunities campus-wide.  The ideal candidate will have a comprehensive understanding of concession and bar programs for a performing arts facility or similar venue, and familiarity with front-of-house theatre or event operations.  They must be a results-driven professional with creative, strategic, and tactical skills to envision new opportunities, develop plans, and bring them to fruition.

The Manager of Food & Beverage will regularly inspect all work areas to ensure compliance with food health and safety regulations to ensure all patrons are served quality food/beverages in a timely manner.  Duties include recruiting, training, and managing food service staff in the areas of scheduling, timekeeping, inventory and ensuring accurate monetary transactions at all times.

This role collaborates with the Operations Team to ensure all aspects of the Orpheum Theatre Group’s (both the Orpheum Theatre and Halloran Centre) food and beverage services run smoothly and effectively.

How You Will Contribute

  • Manage F&B operations within budgetary constraints and highest operational standards.
  • Coordinate with management to ensure quality F&B service at all events.
  • Drive revenue generation strategies for F&B activities, including bar services.
  • Review P&L statements and collaborate with COO and CFO to optimize profitability.
  • Develop and execute strategies to enhance profitability of event spaces and bars.
  • Innovate sales processes and F&B offerings to improve customer experience.
  • Supervise bar program, including pricing, staff training, and operations.
  • Establish annual budgets with cost structures and performance targets.
  • Conduct monthly inventory audits to manage resources effectively.
  • Provide exceptional customer service and promptly resolve patron inquiries.
  • Manage scheduling, inventory, and financial transactions.
  • Assist in recruitment and selection of staff.
  • Train, evaluate, and hold staff accountable for performance.
  • Ensure compliance with food health and safety regulations through inspections.
  • Demonstrate strong leadership, problem-solving, and communication skills.
  • Contribute to the organization’s mission, vision, values, and equity initiatives.

How You Stand Out

  • A minimum of 5 years’ management experience in profit-driven F&B industry or equivalent preferred.
  • Expertise in concessions and entertainment events desirable.
  • Proficient in local food health and beverage safety regulations required.
  • Strategic thinking and problem-solving skills in situations with a variety of variables and limited standardization.
  • Proficient skills in Point-of-Sales systems (i.e. Clover, Square, Toast).
  • Plan work and carry out tasks without detailed instructions; prepare for problems or opportunities in advance; respond to situations as they arise with minimal supervision.
  • Communicates clearly and accurately across all functions of the business in a timely manner.
  • Analysis and application skills that result in understanding, creating, enforcing, and adhering to standardized policies and procedures for the organization as well as for events.
  • Understand, encourage, and carry out compliance with safety policies and procedures; take personal responsibility for safety.
  • Proficient use of Microsoft Office suite (particularly, advanced knowledge of spreadsheets)
  • Requires standing and walking about 70% of the time; may lift and carry objects up to 50 lbs.; push or pull objects up to 75lbs using appropriate equipment; may climb stairs, bend, twist, kneel, stoop, and reach overhead; ability to work at various heights.
  • The noise level in the environment ranges from quiet in the office to moderate to loud during events.
  • May be exposed to irregular ranges of humidity and temperature.
  • Maintains irregular and extended working hours as needed to support event-based schedule.

Barback (Bartender’s Assistant)

Title:  Barback

Department: Concessions

Reports to: Director of House Operations

FLSA Status: Hourly/Non-exempt

Minimum Hourly Pay:  $15.00 plus tips

The barback position is a bartender’s assistant whose job is to help bartenders keep service running smoothly. As part of the front of the house staff, barbacks may also interact with customers when the bartender is busy with other tasks. A multi-tasking individual, well organized, quick thinker who can work well with bartenders in providing them with support.  Honesty and Trustworthiness is required for the responsibility of handling stock, product, and barback services.

HOW YOU CONTRIBUTE:
·         Confirm beverage requirements for each event and ensure all expectations are met before setup.

·         Prepare bartenders’ stations 30 minutes prior to doors opening, ensuring they are fully stocked with clean towels, glassware, garnishes, napkins, and straws.

·         Maintain ice bins at all bar stations and ensure each station is equipped with required liquor, cold beverages, garnishes, and other essentials.

·         Monitor bartenders every 15 minutes and assist during intermissions, including transporting products between bar stations.

·         Empty water bins in portable bars between shows and keep storage areas clean, organized, and secure at the end of each shift.

·         Thoroughly clean and empty ice from Cambros after every event.

·         Provide nightly reports on low stock and necessary orders, with a focus on Wednesday nights for weekend preparation during Broadway shows.

·         Wear uniforms to maintain a clean, well-groomed, professional appearance while carrying out duties with attention to sanitation and safety.

No drinking, eating, chewing, or smoking behind the bar and limit cell phone use during working hours.
Confirm with supervisor prior to leaving the shift.
Complete any other duties as directed.

HOW YOU STAND OUT:
Preferred Experience and Education

·         Required: Availability for night, weekend, and holiday shifts based on show schedules.

·         Preferred: High School diploma or equivalent with previous relevant experience.

·         Minimum age requirement: 18. ABC Card desirable for barback position (or 60 days to apply after hire).

 

Preferred Skills

·         Must have excellent communication skills, both verbal and written

·         Must be able to multi-task in high stress situations

·         Ability to work with little supervision

·         Requires ability to work flexible and extended hours including nights, weekends and holidays as required by event schedule

·         Must be able to lift at least 30 lbs.

·         Ability to climb stairs and stand for long periods of time
