Hog and Hominy Harvest Dinner with Michael Fojtasek

The Enjoy A|M Harvest Dinner Series, presented by Lexus, is a quarterly event celebrating the bounty of each season with a collaborative menu from Chefs Andy Ticer, Michael Hudman, and a featured guest chef. Previous chefs have included Ryan Prewitt (Pêche – New Orleans), Stephen Stryjewski (Cochon – New Orleans), Julia Sullivan (Henrietta Red – Nashville), David Posey (Elske – Chicago), Jason Stanhope (Sullivan’s Fish Camp – Charleston), Ana Castro (Acamaya – New Orleans), and most recently Mike Lata (FIG, The Ordinary – Charleston). This month, we’re excited to welcome Michael Fojtasek – founder and executive chef of MaieB Hospitality, housing a growing portfolio of Central Texas restaurants including Olamaie, Maie Day, and Gimme Burger at Butler Park Pitch & Putt.

 

The evening will begin on December 1 with a cocktail hour at 6 PM. Mahaffey Tent will transform our front parking lot into a festive space complete with holiday carolers, a holiday card photo booth, welcome cocktails, and small bites from Chefs Andy, Michael, and Michael Fojtasek. Guests will then be seated at 7 PM for a family-style dinner.

The dinner experience is $125 per person, with optional wine pairings available at an additional cost. All proceeds benefit the Southern Smoke Foundation, a nonprofit supporting food and beverage industry workers nationwide through emergency relief funding and mental health services – last year we raised over $20,000 with the help from Memphis! Reservations will open on Monday, November 24 at 12 PM. Michael Fojtasek is the founder and executive chef of MaieB Hospitality, housing a growing portfolio of Central Texas restaurants including Olamaie, Maie Day, and Gimme Burger at Butler Park Pitch & Putt. 

Michael opened Olamaie in Austin, Texas, in August 2014 as an outlet for his passion for seasonal ingredients and love of Southern cooking and hospitality. Olamaie offers a modern interpretation of the flavors of the South that first inspired Michael’s love for cooking. Since opening, Olamaie and Michael have received numerous accolades, including 2018, 2019, and 2020 James Beard Finalist for “Best Chef Southwest,” 2015 James Beard Semifinalist for “Best New Restaurant,” 2015 Food & Wine magazine’s “Best New Chefs,” second Best New Restaurant in Texas Monthly’s “Where to Eat Now” in 2015, and Austin American-Statesman’s 2015, 2017, and 2019 “Best Restaurant in Austin.” Beyond these culinary accolades, Olamaie has served as a touchstone for the community by supporting numerous charities and causes and working to promote a culture of fairness and equality. 

Reopened to the public in May 2021, Michael joined forces with New Waterloo as Director of food and beverage for Butler Pitch and Putt, debuting an award winning burger truck called Gimme Burger. In May 2022, MaieB Hospitality partnered with New Waterloo once again to open Maie Day, a community chophouse located on South Congress, where Michael serves as Executive Chef. With prime cuts and liberal portions, Maie Day is a new Texas steakhouse focused on being a daily festival of food and community. The name “Maie Day” reflects the growing MaieB Hospitality portfolio made known by Michael’s restaurant Olamaie, a name that has been in his family for six generations including named after his beloved grandmother, mother and daughter, who also carry the name. 

Michael graduated from The Culinary Institute of America in St. Helena. He currently resides in Austin, Texas, with his wife, Anna Margaret Hollyman, daughter, Olamaie, and son, Burnes.
